RECIPE FOR KATHIRA DRINK


The Kathira drink is cooling and is usually sold during the fasting month in Malaysia. 

Here is the recipe.

KATHIRA DRINK

Ingredients for the syrup
2 cups of sugar
3 cups of water
2 sheaths of pandanus leaves

Other ingredients
1/2 a cup of Kathira seeds or gum
1/2 cup of basil seeds (biji selasih)
10 kembang semangkuk (Malva seeds)
6 - 8 cups of boiled water

Directions
  1. Put the sugar, water and pandan leaves in a pot and boil until the sugar dissolves.  Then leave aside.
  2. To prepare the Kathira, soak overnight and then get rid of impurities and then wash thoroughly.  Strain and then leave aside.
  3. To prepare the Kembang Semangkuk, soak overnight and then remove the seed covering. Wash, strain and then leave aside.
  4. To prepare the basil seeds, soak in hot water until they expand and then strain and leave aside.
  5. Place the Kathira, Kembang Semangkuk and Basil seeds (biji selasih) in a jug.  Pour in the condensed milk and syrup that was prepared earlier.  Add boiled water and then stir the ingredients and the liquid.
  6. Lastly, add ice cubes and the drink is ready to be served.
**  Add a few drops of green colouring to the drink to give it that colour.  You can also make a pinkish Air Kathira drink by adding a few drops of red colouring.
