One simple soup that my late mother usually served to her family is egg drop soup. I think this is one of the most simple Chinese dishes that is easy to cook and delicious at the same time. It is called egg drop soup because the beaten egg is dropped into the soup/ One can add tomatoes or other types of vegetables to this soup.
