PINEAPPLE FRIED RICE

For my mum's birthday, she insisted on giving my Aunt Linda and I a treat at 1919 Restaurant.  One of the dishes we ordered was the Pineapple Fried Rice.  This dish is of Thai origin and is very delicious.
