I did a post about making eggs stand on the 5th day of the 5th lunar month or the Dragon Boat Festival. To the older Chinese folks they would insist that only on this day that eggs would stand. Actually a former teacher in my school who taught Physics said that the reason for the eggs standing is all to do with equilibruim of force. As a matter of fact we carried out a competition in July 2006 to see which student could make the most eggs stand within a space of an hour. The students were given time to practise before we held the competition. You can see pictures of a few of them practising with the eggs in school.
For your information, the students of Brigham Young University, Provo, Utah, USA hold the Guiness Word Record for balancing 1,290 eggs in six and a half hours on March 15, 2003.
