STOCK FROM PRAWN SHELLS


If I have the time, I try to make a stock out of the shells of prawns. Making prawn or seafood stock is similar to making chicken stock; it takes time and attention, and the final result makes it worth the effort.
Here is how to go about it.

How to Make Prawn Stock


Ingredients
Prawn/shrimp shells
1 large yellow onion, sliced or chopped
1 carrot, roughly sliced or chopped
1 clove of garlic
2 teaspoons salt

Instructions
1.  Wash the shells.
2.  Your fry the prawn shells in a wok for about 10 to 15 minutes to enhance the taste.
3. After this, add water to the shells.  Slowly heat the shells in the water.
4.  When it has boiled, reduce the heat.  Add the carrot, onion and cooked garlic.
5.  Simmer until cooked, about 5 to 10 minutes minutes.
