STIR FRIED ANCHOVY, POTATO AND PEANUTS

This Malay dish looks simple enough to cook but then it does take a lot of skill and an experienced cook to get it right. The one featured above did not quite meet the standard.  My friends who are good cooks can tell if this dish is good by just its looks.
