NASI PANDAN

One of my favourite food is Nasi Pandan.  There is one stall at the Gourmet Square in Ipoh that sells this type of rice and the accompanying dishes are very delicious.  So much so that one would usually have to line up to order the food.
Below you see the plate of Nasi Pandan or Pandanus Rice that I had for dinner on Saturday.  The dishes are cooked Nyonya or Peranakan Style.

I recently got the recipe for preparing the rice and am sharing it with you here.
RECIPE FOR NASI PANDAN

Ingredients

500 g white rice (any type of white rice will do)
100 ml santan (coconut milk)
500 ml water
1 tbsp salt
15 pieces of pandan leaves

Method
  1. Shred the pandan leaves, blend with 250 ml water. Strain to obtain juice. Mix the pandan juice with the santan. Add the remainder of the water until the mixture is about 600 ml.
  2. Steam the rice until it boils.  
  3. While the rice steaming, cook the pandan mixture until it boils.  
  4. Then mix the steamed rice with the pandan mixture thoroughly.
  5. Steam the pandan rice for another 20 minutes.  The pandan rice is ready to be served.
