WATERCRESS DRINK

I bought some watercress from the market yesterday morning to make into a herbal drink. This drink will help to cleanse the kidneys and help the body unload toxic wastes from the tissues and blood. It also helps lower heatiness of the body and relieves indigestion.
I just put the watercress, red dates and honey dates into the pot in this picture.
This is how the watercress looks like after being boiled for some time.

RECIPE FOR WATERCRESS DRINK


Ingredients -

500 g watercress (西洋菜汤), use stems and leaves
2 tbsp Chinese wolfberry/goji berry (枸杞子) - optional
1/2 cup of dried honey dates ( (蜜枣) mutt joe in Cantonese)
5 - 8 dried red dates (红枣)
2- 3 litres of water
Rock sugar to taste

Method
  1. Wash watercress and cut into half. Rinse honey dates and red dates.
  2. Add watercress, honey dates and red dates in a pot with 2 - 3 litres of water. Bring to boil. Reduce to small flame and simmer for 1 hour.
  3. Add rock sugar to taste.
  4. Sieve and serve, either warm or chilled.
