OOH! Lookit at the delicious looking sambal kerang above. Sambal udang or (cockles sambal) is not as common as sambal udang (prawn sambal) or sambal ikan bilis (anchovies sambal) but there are many people I know who enjoy eating it. Kamariah and her husband love eating sambal udang and she makes heavenly tasting ones as well. I too like eating it but then have to refrain from doing so as I get pimples after I indulge.
Sambal udang is quite easy to make and you need cockles, sambal, belacan, onions and tamarind (assam jawa). Once cooked, this dish is great with piping hot white rice.
