HOW TO MAKE PING PEI (SNOWSKIN) MOON CAKES


I am sharing with you a recipe for making Ping Pei Yueh Pang (冰皮月饼)or Snow Skin moon cakes that was given to me by my friend Annie.  She said it was really easy peasy as one needs not do any baking but just refrigerate and eat it cold.

RECIPE FOR PING PEI MOON CAKES

Its very simple. Just buy from the ingredients from the baking supply shop.
1) the flour (250g) & shortening
2) filling (500g)
3) mould
the ingredients are all pre-mixed.

Method
  1. Knead the flour and shortening with 250ml water (become 500g). 
  2. As a 125g mould is used, divide the dough and filling into 8 portions (Total 1000g/125g=8). 
  3. Wrap the filling with the dough and use the mould to press it out. 
  4. Refrigerate and eat it cold.
(Refer to pictures above for "before and after" look of the moon cake.)

Note: The dough is white. So Annie added one drop of colouring, thus making the mooncake look nicer.
