Once in a while, the school canteen operator will come out with a different type of snack other than the ones usually offered for sale This morning, I was pleasantly delighted when I found these colourful Kuih Kosui when I was at the canteen.
My late father loved eating Kuih Kosui and I'd buy them for him whenever I came upon them. This type of saucer shaped cake is made from rice flour and is flavoured with pandan juice. Kuih Kosui tasted better if eaten with freshly grated coconut.
