FRUITING ABUNDANTLY

Just look at the Belimbing Buluh or Sour Carambola in the pictures above.  The tree planted behind the school library is fruiting abundantly.  A while back, the plant did not bear much fruit and a tip I got from Kamariah was to prune it. Well, as can be seen in the above pictures, it works.
Since there is such a abundance of the belimbing buluh, it is a shame to let it all go to waste.  As a matter of fact, some of the fruit had fallen on the ground and are beginning to rot.
I managed to find a recipe called Sambal Hitam Pahang which uses a lot of this fruit.
Here is the recipe:

SAMBAL HITAM PAHANG

INGREDIENTS
5 cups of belimbing buluh, cleaned, boiled with lots of water till the belimbing feels tender and turns dark in colour , drain. Usually, the belimbing should be boiled for a few hours.
2 tbsp oil
1/2 cup anchovies, pound coarsely
15 shallots / bawang merah kecil, pounded coarsely
10 of birds-eye-chillies, pounded coarsely
METHOD
1. Heat the oil. Put all the ingredients into the hot oil.
2. Continue cooking on low fire till the sambal is very dry & very dark in colour.
