FRIED LOTUS ROOT CHIPS

We can make chips from the lotus root by deep frying them in oil.  The technique is pretty much like making potato chips and arrowroot chips. 

Here is how to do it.

Method


1.Slice the lotus root widthwise as thinly as possible.  Use a vegetable slicer so that the lotus root would be evenly sliced..  Place the slices in a bowl of water until ready to cook.

2. Next, heat oil in a  wok or large deep saucepan. Remove the lotus root from the water and dry the slices thoroughly with a towel or tissue. 

3.  Then add some of the slices in the heated oil  until they turn golden brown and crispy.

4.  Place the fried chips on a kitchen paper to absorb the extra oil.  In the meantime, add more of the slices into the oil to fry.  Repeat the process until all the slices are fried.

5.  You can store the lotus root chips in an airtight container after they have cooled.
