CACTUS OMELETTE ANYONE?


Yup, you can make a dish out of cacti. I was watching a travel documentary on telly last weekend and saw the host being served cactus omelette when he visited Mexico. The ones that he was served were the Prickly Pear or Opuntia which I have growing in the Cactus Garden in my school.
Here is how one cooks the cactus ...
  1. First, slice some onions and lightly fry it.
  2. Then, slice the cactus.
  3. After that, add it to the onions. Cover and continue to the cook.
  4. The cactus is cooked when it changes colour from a vibrant green to the one shown in the picture above.
  5. Add three eggs to 3 cactus paddles (the pads or leaves).
  6. Mix well and continue to cook with the lid off.
  7. Add salt and it is ready to be served.

Hmmm .... shall I try the recipe as there are quite a lot of cacti in the garden.
