Lingau or Lotus Root Soup is one of my favourites. Most people boil it with pork ribs but since I don't eat those, mine is substituted with dried anchovies. I also add Buntong Ginger.
The lingau is the main ingredient of this soup. When combined with red dates and ginger, it has this sweet flavour. They are ‘cooling’ in nature, though cooked lotus root is slightly ‘warm’. The cooked lotus root can strengthen the spleen and promote the functional activity of the stomach, replenish blood, promote tissue regeneration and arrest diarrhoea.
