LAI CHEE KANG

The Chinese have a cooling drink called Lin Chee Kang as the main ingredient is Lin Chee or Lotus seeds. The other ingredients might include pak ko, longan, quail eggs, snow fungus and rock sugar. However, the Malays have sort of improvised on the drink and refer to it as Lai Chee Kang.  Instead of the lotus seeds, they put in different types of jelly and other ingredients.
In the above picture, you can see the bowl of Lai Chee Kang that I had at a Malay restaurant.  It had Buah Kabong, nata de coco, cincau, lychee and other cooling ingredients.  If I am not mistaken, they use brown sugar instead of rock sugar.
