BUBUR PULUT HITAM


The dessert above is called Bubur Pulut Hitam or Black Glutinous Rice Dessert. In the Hokkien Dialect, it is known as Bee Koh Moy. Bubur Pulut Hitam is made of black glutinous rice (black sticky rice), water, sugar, and topped with slightly salted coconut milk when served.

BUBUR PULUT HITAM

INGREDIENTS

2 cups black glutinous rice
6-8 cups water
2 screwpine (pandan) leaf
3 heaped tablespoon sugar
1 teaspoon salt
1 cup coconut cream(santan), or fresh milk

METHOD
  1. Soak the rice in water for about 1 hour. The rice will turn black.
  2. Rinse, and pour in a pot along with water, and pandanus leaf. 
  3. Let it cook for about 30 minutes.  Place the lid over the pot.. Add water as needed. You will be looking out for a porridge-like texture. 
  4. Add salt and sugar to taste. Let it cool.
  5. Coconut milk or milk (about 2-3 teaspoonful is added when serving the dessert. 
  6. This dessert can be served warm or chilled.
