LOVE LETTERS: KUIH KAPIT

My sister Li Lian bought a big tin of Kuih Kapit or Love Letters for my mum and me.  Since my mum didn't want to eat these festive biscuits, I got them all to myself.  Hee Hee Hee.  The Kuih Kapit is popular during the Chinese New Year and Hari Raya Aidil Fitri.  . They were made using a special mould with auspicious symbols and Chinese characters and cooked on a charcoal stove.
From small, I was told that the best Kuih Kapit is supposed to be thin and crispy. Come new year time, I'll see some of my neighbours labouring over the hot charcoal fire to come up with this yummy treat.
