FISH SLICES IN SWEET AND SOUR SAUCE

This is one of my Aunt Linda's favourite dishes. Whenever we eat at a restaurant, she would request that we order fish slices in sweet and sour sauce. Actually, I am quite good at making this dish. However, I don't make the fish into slices instead I fry the whole fish. I cooked it once when I was studying in England for students from other countries who were in the same university with me and they loved it.

Here is the recipe.

Ingredients

500 grams fish fillet (choose the type of fish that you prefer)
3 tablespoons cornflour
3 cups of oil for deep frying
1 tablespoon of olive oil or corn oil

To make the sweet and sour sauce:
2 tablespoon sugar
2 tablespoon soy sauce
2 tablespoon Tomato sauce or vinegar
1 tablespoon cornflour
1/2 inch ginger (chop finely)
2 spring onions
onion, cucumber, tomato (optional)

Method

1. Cut the fillet into slices and coat with cornflour
2. Heat the oil in a wok over high heat until you see smoke
3. Lower the heat. Add in the fish slices with bamboo chopsticks.
4. Deep fry the fish slices until golden brown.
5. Remove from wok and strain the oil.
6. Heat olive oil in wok
7. Mix the tomato sauce, sugar, soy sauce and cornflour in a bowl.
8. Add two tablespoons of water to the mixture (some people use cooking wine).
9. Add the chopped ginger and spring onions into the oil. (You can also add cucumber, tomato
and onions.)
10. Stir in the mixture in (8) and stir over moderate fire until it thickens.
11. Pour the mixture over the fish slices.
12. Serve it while it is hot with rice and other dishes.
