BINGKA JAGUNG


This dessert was sold in the school canteen today. It is called kuih bingka jagung. Here is how to make it:
Ingredients (for 1 tray):
250 gm wheat flour
2 tbs custard powder
250 gm sugar
400 ml thick coconunt milk (santan)
200 ml water
4 eggs
2 tbs butter/margarine (melted)
a few drops of vanilla essence (optional)
1 to 2 drops of yellow colouring (optional)
a bit of salt
1 can of corn (cream style)
Method:
1. Beat the sugar and eggs.
2. Put all the other ingredients together except the corn.
3. Mix well.
4. Add the corn.
5. Pour into a tray that has been greased with butter/margarine.
6. Bake in a preheated oven of 180 degrees for 1 hour 20 minutes.
7. If you prefer the kuih to be crispier on the outside, you can extend the baking period until the sides become golden brown.
