DRIED FISH MAW 魚鰾 (yú biào)







Fish Maw or Yu Biao is a delicacy used in Chinese cooking, especially soups. It is considered a luxury item. Look at the price in the picture. A kilogram can cost between RM90 or RM120 depending on the quality. Fish Maw is actually the Swim Bladder or Air Bladder of the fish.

Ladies take note. The fish maw is an excellent source of collagen. The ones sold at the shop are purchased dried and they come as hard, solid, hollow, translucent tubes. Before cooking, they must be soaked to soften. In general, fish maw has about 25% protein and 75% carbohydrates.
