DEHYDRATED VEGETABLES

It has been a while that I have eaten soup boiled with dehydrated vegetable or Choy Kon Tong.  My guess is that long ago before refrigerators were invented the Chinese in China dehydrate them so that they could keep for the winter months.  Even now, the dehydrating process is still used, possibly because such type of vegetable is delicious.
