LIN CHI KANG

Some of my Malay friends and students refer to this dessert as Lai Chee Kang but it is actually known as Lin Chee Kang.  In Cantonese it can be loosely translated as lotus seed drink.  Now this is a cooling Chinese traditional drink generously filled with lotus seeds, colourful sliced jellies, pearl sagos and dried longans.
