Hor Hee noodle is basically noodles in a fish soup base, with small springy fish balls, thinly-sliced fish cake, crunchy tong choy (a preserved vegetable), bean sprouts or shredded lettuce, and savoury sui kao (fish wonton), served with cili padi drenched in light soya sauce. It is called Hor Hee because it is usually made with kuey teow noodles but one can order other noodles. Me? I like mine with glass noodles (tong fun or tunghoon). My favourite Hor Hee stall is the one at the Hollywood Coffee Shop in Canning Carden.
