Folks, here is an update on why an extra tea cup is always given with a pot of tea at a Chinese Dim Sum restaurant. The answer is compliments of a visitor called Bal:
The third cup is for the tea to cool down. It is used to top up the other two cups. Debris collected at the bottom is discarded. The third cup is always filled as a spare to cool down and fill the other two cups.
