THE COOKED BAMBOO SHOOT




 Ths is the dish that Kama helped to cook for me using the bamboo shoot that I harvested.  It is called Masak Lemak Rebung dan Udang (Bamboo shoots and prawns cooked in coconut milk with turmeric).  This dish is a real appetiser and would make me have a second helping.

Here is the recipe:

MASAK LEMAK REBUNG DAN UDANG

Ingredients:
The harvested bamboo bamboo shoot (if not you will need to buy them either in canned form).
½ lb. fresh tiger prawns
½ cup thick coconut milk (santan)
--(use top portion from an unshaken can of coconut milk - it tends to be thicker)
1 cup thin coconut milk
--(Take ½ cup coconut milk and mix with ½ cup water)
3 tbsp. Oil
salt to taste

Preparation:
In mortar & pestle or food processor, grind into fine paste the following:
5 red chillies (medium sized fresh or dried) - If they are the dried ones,  soak first and remove seeds.
¾ inch pieceof  fresh turmeric (kunyit)
2 cloves of garlic
8 shallots
1 stalk lemon grass (serai)
1 cup of baby tomatoes

Method
1. In a hot, well-oiled wok or pan, fry ground paste for a minute or two.

2. Add bamboo shoots, thin coconut mil. Stir.

3. When it boils, add prawns and thick coconut milk and lower the heat to a simmer.

4. Stir until prawns are pink.

5. Serve over steamed rice.
