PICKLED 4 ANGLED BEANS

When I visited my sister and her family in Singapore they brought me to a restaurant serving Cantonese style cuisine.  One of the dishes that I particularly liked was the pickled four angled or four winged beans.  Not sure if it is Cantonese or Peranakan in origin but this salad is interesting.  You can see them served in a hollowed out tomato above.
I decided to plant the beans last week as they grow easily here, climbing up fences and giving a handful of beans every 3 days or so from one single plant.
Preparing this dish is easy as no cooking required.  Lime juice sort of pickles the beans which have to be cut super thin.  You will also love the crunch of the uncooked beans.
