One of the drinks that I buy from the bazaars during the Ramadan month is the Air Kathira (also spelled Khatira or Katira) or Kathira Drink. It is named such as it is made from the kathira gum which is a tree-extract.
It used to be very popular a few years ago and I could easily find the drink being sold in most of the drink stalls but not so this year. Air Katira is a cooling drink made with evaporated milk, pandan-flavoured syrup, kathira gum, biji selasih (basil seeds) and buah kembang semangkuk (Malva nuts).
I bought this drink from the Seri Manjung bazaar for RM2. It was enough to fill one jug. Green colouring is usually added.
