FISH AND PAPAYA SOUP

Yesterday I blogged about a herbal drink made from papaya.  Well, Annie sent me a recipe that she got from the Internet on making Papaya Fish Soup that she had tried.  She told me that she uses ikan bilis or anchovies to substitute for the threadfin fish (紅衫魚 (hóng shān yú) ).

Here is the recipe.
Ingredients
300g threadfin (use tail portion), washed and drained
300g half ripe papaya, peeled, seeds removed and cut into cubes
3 slices ginger
500ml water
Salt to taste

Method
Except for salt, combine all other ingredients in a double-boiler or heatproof bowl. Double-boil for 1½ hours. Add salt and remove from heat.

Serve the soup hot.
