Here are two pictures of the vegetarian noodles (Beehoon) that I cooked for my students to break their their fast on the first day of Ramadhan. The dish is halal as the ingredients used are all vegetables or beancurd.

1 packet Bihun (vermicelli)
1 cup dried mushrooms, soaked in water 30 minutes to soften
1/4 head fresh cabbage
1 bunch of Mustard leaves
100 g bean sprouts
1 carrot (sliced)
3 - 4 shallots
4 - 6 pips of garlic
2 red chillies
2 white bean curd
2 tbsp chilli paste
2 - 3 pieces (Lam Yu - preserved red beancurd)
1/2 tsp pepper powder
1 inch garlic (sliced)
3 tbsp vegetable oil
2 tbsp light soy sauce
1 tbsp sesame oil
Method
- Soak noodles in water until tender, it will be just a few minutes.
- Drain the noodles and rinse, set aside.
- Remove stems and cut the softened mushrooms into slices, keeping the water in which the mushrooms were soaked.
- Cut cabbage into slices, wash and set aside.
- Cut garlice and shallots.
- Cut the other vegetables, wash and keep aside.
- Heat oil in a wok, fry the shallots and garlic until fragrant.
- Add the Lam Yu and chilli paste and keep frying until fragrant.
- Add mushrooms, then cabbage, the other vegetables, soy sauce, and 4-5 tablespoons of the mushoom water. Stir-fry until the vegetables are cooked. Add the noodles, add the sesame oil, stir and mix well, and serve.
