A friend of mine who went to Medan recently gave me a few slices of the Indonesian Layer Cake or Kueh Lapis that she had bought during her trip there. Notice that there are many layers in the cake which would most undoubtedly make it very tedious to make. In the Indonesian language, the layer cake is known as Spekkeok.
The Kueh Lapis Indonesia is formed by baking or grilling one layer of batter at a time until the desired height for the cake is obtained. This would take some skills and experience to master to get the layers just right; not to thick, not to thin and even throughout.
