KUIH LOMPAT TIKAM


I bought this container of Kuih Lompat Tikam at the market.  I think that it is originally from Kelantan. 
Here is the recipe.

Kuih Lompat Tikam

Ingredients (A)
125g rice flour 
1325ml santan 
125ml pandan extract ( or 2 tsp pandan paste)
1/4 tsp salt
1 tsp alkaline water

Ingredients (B)
50g rice flour
1200 ml thick santan
1/4 tsp salt
1/2  tsp alkaline water

Ingredients (C)
500g gula Melaka
1025ml water

Instructions
1.  Prepare 28 - 30 small plastic bowls with lids (can be replaced with glasses)
2.  Wash, dry and arrange on tray

FOR INGREDIENTS A
1. Mix all the ingredients in a bowl and sieve. 
2.  Then add the mixture in a non-stick pan and stir on medium heat using a wooden spatula.
3.  Stir until the mixture becomes thick. 
4.  After that put a bit of the mixture into each plate/glass until half full.   And leave aside.

FOR INGREDIENTS B
1. Mix all the ingredients in a bowl and sieve.
2. Then add the mixture in a non-stick pan and stir on medium heat using a wooden spatula.
3. Stir until the mixture becomes thick.
4.  After that put a bit of the WHITE mixture into each plate/glass until 3/4 full.
5.  Cover the bowls or glasses and keep in the refrigerator.
6.  When serving add the Gula Melaka syrup on top.
FOR INGREDIENTS C
1.  Cook the Gula Melaka in water until it dissolves and boils.
2.  Sieve and then cook for a while longer.
3.  Let it cool before placing in the refrigerator.
